The Hanna Instruments HI99163 is an ideal pH and temperature meter for measuring pH and temperature in meat or beef. Its special conic tip electrode allows it to penetrate semi-solid samples such as meat and allows for consistent and accurate pH and temperature analysis. . The electrode material is made of a hazardous free electrolyte making it safe to use in food samples. pH range is 0.00 - 14.00 pH, Temp range is 32.0 - 140 0F. The ideal pH range for meat is 5.8 - 6.3 pH. Meat with a higher pH has better water retention properties. see details
